my poor little baby was having a rough time teething last night, but he was still a good sport and let us dress him up like a little gentleman lion for halloween. our neighborhood here in redlands takes the festivities very seriously. we live in the downtown historic district, and several main thoroughfares close to traffic to accommodate the over 17,000 trick-or-treaters who flock to the area to get a look at the fantastic halloween decorations and haunted houses lining the streets. that and the candy, of course. it was actually a little too hectic for my taste. we walked down the street to let adam look at all the excitement, but the crowds were so large that we decided to go back home to enjoy the lighter trickle of kids passing by.

i know i’m diverging a bit from my usual path, but i decided to interrupt your regularly scheduled outfit post for something a little different. i can count the number of times i’ve posted about food on this blog with one hand, which is actually pretty funny considering the fact that i’m a certified pastry chef. that’s right, in another life long ago before i ever had a blog, i went to culinary school and worked as a cake decorator. it was a pretty fun time in my life, but i eventually moved on because i was young and still wanted to try out a few more things before settling on a profession.
fast forward a good many years and i’ve decided to have some fun in the kitchen again. mostly thanks to a great deal of persuasion from my sister, who’s convinced me to share some of our collective culinary prospects here on the blog. she’s been itching to spend more time preparing home cooked meals, and now that adam is getting a little older, i would really like to do the same. it’s a much healthier lifestyle because we tend to be a bit more conscientious about what we buy at the grocery store and put into our own meals than they do at the local burger joint. case in point: i suggested we try making some of our favorite candies for halloween. not exactly the healthiest idea, but once we started perusing recipes online, we pretty much knew that we wanted to try out healthier alternatives. we made almond butter cups with dark chocolate and no added sweeteners, and our own version of almond joy using agave-sweetened coconut flakes.
you’ll have to forgive us while we iron out the kinks, but hopefully these first two recipes will make a little bit of sense!
dark chocolate almond joy (adapted from tasty yummies)
filling
- 1 1/2 cups unsweetened coconut
- 1/4 cup melted coconut oil
- 2 tablespoons agave
- 1 teaspoon vanilla extract
topping
- 10 ounces of dark chocolate
- almonds
simply toss all of the filling ingredients into a bowl and mix. the original recipe calls for less coconut, but i ended up adding more because my filling turned out too thin. i also ran mine through a quick whirl in the food processor because the coconut i bought was rather chunky. i then set the bowl aside in the refrigerator while i melted the chocolate.
for the chocolate coating, i melted 16 oz. of guittards dark chocolate (i used more than the recipe calls for because i was also making almond butter cups at the same time). i bought little pastilles that are designed for melting, but chocolate chips or a chopped chocolate block will also work. you just melt it in a double-broiler on low.
once the filling is cool, it will be more solid so you can roll it into little balls. i used a tablespoon to measure them out evenly and used my hands to roll them into shape. then simply dip them in the chocolate with a fork and place them on a wire rack so the excess can drip of. top each one with an almond and you’re ready to enjoy!
dark chocolate almond butter cups
filling
- 1 cup almond butter
- 4 tablespoons melted coconut oil
topping
- 10 oz dark chocolate
- sea salt (optional)
i browsed around for healthy almond butter cups and found a lot of recipes that called for a weird ingredients like protein powder or almond meal. i finally came to the conclusion that you really don’t need all of that stuff. so for ours, i simply mixed almond butter with coconut oil. i will tell you now that the brand we used (maranatha) is not my favorite nut butter. if you can, go to your local health foods store and get freshly ground nut butter. i find that texture to be the most pleasing and flavorful. once you mix the filling, it will be a good consistency for spooning into the cups.
set aside the filling at room temperature while you melt the chocolate in a double-broiler. for this step, i placed my paper cups into an appropriately sized baking dish so that they would hold their shape. it’s not necessary, but i think it helps. then simply spoon about a teaspoon of melted chocolate into each cup and use your finger to coat the bottom and sides of the cup evenly. place them in the refrigerator for a few minutes until the chocolate hardens. then spoon in the nut butter mix leaving about 1/8″ of room at the top. place them back into the fridge until the filling is solid, then top them off with more melted chocolate. i finished some of mine with pink sea salt to taste. then back into the fridge until they are ready to serve!
making necklaces
i’ve never really had a huge jewelry collection, but since adam was born, i’ve really had to pare down my already sparse collection. most days, i can really only get away with wearing dainty rings that won’t snag on baby blankets. a bit of consolation came in the form of this cute necklace by mama and little, but it really only fueled my desire to find more baby-friendly jewelry that doesn’t look like it was, well, made for babies. i started browsing around online and collecting various baby-friendly beads: food grade silicone beads in subtle colors, unfinished wood beads, break-away clasps, waxed cotton string. and i finally got to experimenting with some designs a couple of weeks ago at a ladies craft night with rubyellen, melissa, and lauren. i made a couple of designs that evening, and then a few more later that night at home. and since then, i’ve become a necklace-making machine! i’ve already ordered more unfinished wood pieces, and am patiently waiting for a shipment of eco-friendly, natural baby paints by natural earth paints so that i can try my hand at painting baby-friendly wood beads and bangles. i’ve even concocted a natural beeswax wood finish to protect the paints once they arrive.
i like the look of them, and adam has been happily teething on them when i hold him in my arms. he does this silly little singing voice while he chomps on them. and i feel good knowing that my jewelry doubles as an awesome baby toy, made with unfinished wood, food-grade silicone, and waxed cotton.

as much fun as i’ve had keeping a record of weekly adam photos, i think i’ve finally decided to move on from the rigid structure of it. especially now that the holidays are here and we’ve been documenting all of our activities with so much fervor! so from now on, i’ll just be posting without the constraints of a week-by-week numerical structure, and will just be sharing some of my favorite photos as we go along. i’ve never been good about following “the rules,” even when i set them for myself!
so here’s the latest photo of my little guy at 9 months. i can’t even keep track of how many weeks old he is anymore! on this particular day, we took a quick drive up to snow line orchard in oak glen to enjoy some fall weather and bundle up in sweaters. adam isn’t quite old enough to go apple picking, but he did get a kick out of his teeny tiny apple!

outfit: up and away
it’s been a month since i started using the up system by jawbone, which means it’s time for me to share an update about how it’s been working out. i have to admit that i was a little skeptical about how a simple little bracelet could really do anything for me. i mean, it’s essentially a really fancy pedometer, right? well, yes and no. it records your steps during the day and your sleep at night. but the interesting part is what happens once the data is collected in the up app (which, by the way, you can use to record your information even if you don’t have a bracelet).
when i first put it on, i was a little concerned that it would somehow make me feel bad. i didn’t really know how much i walked in a day or if my activity was up to snuff. and i have a baby and, you know, a life. sometimes these things are out of our control, and the last thing you need to hear is a little voice in your head telling you that you aren’t good enough. but much to my surprise, it’s actually an incredibly helpful tool. instead of telling me that i needed to reach some unachievable goal in order to be healthy, it began recording my activity and smartly creating incremental goals to help me inch towards higher goals. i wasn’t getting enough sleep at night, so it would give me a mini challenge now and again, providing me with a suggested bed time that might help me get the sleep i need to function during the day. it even provides tips and tricks to help you get a better night’s sleep, and links to relevant studies about sleep. i was skeptical that these tiny suggestions would really have an impact, but after a month, i’m actually getting better sleep! for the first time since i started using it, i’ve been reaching 100% (or more!) of my goal.
and even more interesting than that: over time, the data gets smarter. the app started to look for a correlation between how much sleep i get at night and how active i am during the day. and wouldn’t you be surprised to know that since i’ve been getting more sleep, i’ve been way more active during the day? no, i haven’t suddenly become a marathon runner, but i am very surprised to say that a funky little bracelet and a smart little app have actually been helping me to make some pretty positive lifestyle changes. so while my one-month challenge is over, i won’t be giving up on up any time soon.

adam: 34 weeks
is there anything more precious than a baby at bath time? i don’t think so!
adam: 33 weeks
i usually post my photos of adam over the weekend, but i was so busy the past couple of days that i wasn’t able to get to the computer! so here is a belated photo of my little dude at 33 weeks, decked out in autumnal hues in celebration of the season. it’s still too warm for all this layering, but we usually go out on early morning walks, so i take advantage of the opportunity to bundle him up before the chill burns off. that’s just what we do in california, we wear sweaters purely for the novelty of it!
he’s also sporting a silly little face courtesy of all those new teeth he’s been growing. he’s always chewing on his lip or making some other silly contortion as he gets used to his new chompers.

adam: 32 weeks
there’s just something about a baby in a fresh white onesie, all cozy and wrapped up in blankets… here’s my little guy at 32 weeks. you can see that his two bottom teeth were just breaking through. i didn’t even know he was teething until i felt his gums and noticed that a tooth had broken through! to be fair, i didn’t know what to look out for, and i did have an inkling that there was something going on because he kept making these funny faces, sucking on his bottom lip. thankfully he didn’t get sick or feverish or even especially cranky about it. i can’t say the same about his top two teeth that are now growing in, but he’s still all smiles most of the time, even when you can tell he doesn’t feel too great.
outfit: one step at a time
just last week, we celebrated adam’s eight month birthday. i seriously can’t believe how quickly these past eight months have flown by. i’ve mostly been focusing my energy on taking care of this little guy and adjusting to our new life here in redlands, but i would be lying if i said that i never thought about myself. i don’t know if i ever talked about it on my blog, but seeing my body right after adam was born really threw me for a loop. this kid was not small. he clocked in at 9lbs. 14oz., and that unplanned c-section was no joke. needless to say, it was difficult coming to terms with the fact that i was never going to go back to my pre-baby body, and that it would probably take a long time for my body to recover after everything it had been through.
i mean, that little guy grew to massive proportions inside of me over the course of nine months, he stretched my body to the limits and smashed all of my internal organs. then one day he was born, and i literally ballooned up into this giant pufferfish while my body adjusted to the drop in hormones while recovering from major surgery. then two weeks later, i hopped onto the scale at my doctor’s office to discover that i had literally dropped 35 pounds, leaving me with all of this strange, loose skin, and a scar that severed my abdominal muscles in half.
fortunately, i had more pressing things to worry about. like, you know, my precious little bundle of joy. so like any person trying to keep their sanity post baby, i did my best to be kind to myself. instead of dieting, i focused on taking my vitamins and eating healthy so that i could breastfeed my baby and provide him and myself with the best nutrients possible. and instead of going to the gym, i focused on holding my baby in my arms and rocking him to sleep, and taking him on long walks around the neighborhood.
and now it’s eight months later. i said goodbye to the baby weight months ago, but it’s not like i was a fitness model before i got pregnant. shoot, i had an office job and i wasn’t getting nearly enough exercise. if anything, i feel myself getting stronger than i was before. and i’m more motivated than ever to be as healthy as i can be so i can run around and chase after my little dude who’s frighteningly close to taking his first steps. so when jawbone asked if i’d be interested in partnering with them to try out their UP system, i was definitely on board. i just got my bracelet in the mail last week and have been wearing it for a couple of days. it’s been recording my sleep at night and my activity during the day, while providing me with realistic goals for both. turns out, taking care of a baby is actually a pretty good workout in itself! i’m still getting to know how it all works, but i’m going to be sharing a few updates here and there, and will be reporting back in a month to tell you how it’s working out for me.

adam: 31 weeks
here’s my little guy at 31 weeks. the week prior, we discovered that he could pull himself up into the standing position on his own! if you ask me, it’s a little soon for all that business, but this boy really wants to walk! he’s hated tummy time since he was born, but give him a chance to hold onto the edge of something or assist him with a few steps, and he’s all smiles.
